National chocolate cake day

Winner winner chocolate cake dinner!! And yes, I might have had chocolate cake for dinner. Why not? Chocolate comes from a bean and beans are a part the food groups right? I should really draw you Brandie’s food pyramid, you could get behind that one 😉

I turned to Isa does it, I haven’t cooked anything from it in a long time and it’s a good book.

I only wanted a bite of it, ended up eating the whole slice  it’s good! But don’t take my word for it, head over to Post punk kitchen, Isa has the recipe for you!!

My son said “Mom, you’re always celebrating national days- I love it, we should do this every day!” FYI, tomorrow is national have fun at work day- so I think I’ll play on social media all day long  😉

Menu plan Jan 25-31

This week I’m only going to focus on recipes by Ginny, vegan in the freezer as I’m in the middle of other projects. Next week I’m going to be posting recipes by Jill the veggie queen.

White pizza sauce

Brown rice and broccoli casserole

Chili pasta casserole

I’m going to use the white sauce for pizza, also for pasta with stir fried veggies- frozen or fresh veggies what I can buy that doesn’t cost me an arm and a leg. The casserole dishes can be revamped and turned in burrito’s.

When one plans ahead, one has yummy dinner

On Tuesday I had potatoes baking in the oven, rice cooking in my instant pot and three recipes in mind, as I was eating my left over soup. I love Laura’s new book Vegan-ease, and while I didn’t want the recipes for dinner that night, I knew I wanted to try them for Wednesday’s dinner. And seeing how I prepped the main ingredients the day before- all I had to do was some chopping of veggies and assemble the rest of the ingredients. A teaspoon of this, 1/4 teaspoon of that, wrap and bake. EASY!!!

The first dish I made was an oven fried casserole : rice, broccoli, ginger, garlic. I added onions and celery to it. Look how pretty it looks- this is before it was cooked.

Put foil in it and pop it into the oven and cook for 45 mins. Clean the kitchen and voila : this happens

This tastes like good old fashioned, home made soup that your grandma cooked, or the recipe that has been handed down for generations. Only no broth. It’s comfort in a bowl.

Now, time for the potatoes. I baked 5, two for chilli chickpea stuffed spuds (3 for fries). I cooked the chickpeas in the IP, but you can used canned for extra ease. Plus I baked the potatoes ahead of time- saved me about an 1 in the kitchen. (Though I could’ve baked them when I cooked my casserole)

They are just waiting to be put in the oven. Once baked they have a wonderful texture- crunch from the chickpeas, softness from the potatoes. Has a great flavour from the chilli powder and smoked paprika. I can see warm salsa going on these even though it does not need any extra flavour or texture. They are great! In fact I might have had one for breakfast 🙂

See?!?!?!  Plan ahead and you shall be happy!! Tonight, I’m making fries. I’m also going to freeze some of the casserole in appropriate serving containers and putting it in the freezer- for those days I don’t feel like cooking but want a healthful homemade meal.

My 10 year old-self and Juice

I lost my motivation yesterday. I didn’t feel like doing anything. Didn’t feel like cleaning, laundry, cooking basically adulting. I didn’t adult much of the day. Still wearing my pj’s at 2 pm and hungry it was only natural to make a grilled cheeze. Right? It was an effort to defrost two slices of bread and butter them up and throw on 2 slices of cheeze.

Have you guys ever tried Chao from Field Roast yet?

imageThis cheeze is the best. Great on crackers, by itself and grilled cheeze. I bought the peppered kind this time around, and I have tried the plain one. BOTH are great!!!! Look at my sandwich…..

imageOf course I paired this with ketchup, that’s what the inner 10-year-old self wanted.

After eating this I made three types of juice. That’s about the only adulting I did. Plus I actually got dressed to make them 🙂

Look at the beautiful juice!!!! Very tasty! And because I was still feeling lazy, I put a bag in the container to catch the pulp.

Apple bags come in handy. You can also use the bags you put your produce in. I didn’t save the pulp, but Kayla does and she uses it for soups and such. If you want more juice ideas check out Joe’s site. He has tons 🙂
