This week I’m only going to focus on recipes by Ginny, vegan in the freezer as I’m in the middle of other projects. Next week I’m going to be posting recipes by Jill the veggie queen.

I’m going to use the white sauce for pizza, also for pasta with stir fried veggies- frozen or fresh veggies what I can buy that doesn’t cost me an arm and a leg. The casserole dishes can be revamped and turned in burrito’s.

Cashew Rice Bowl

Kayla and I were chatting the other night about how expensive groceries are becoming, and it’s only going to get worse. It’s incredible at how expensive produce is, 6 dollars for cauliflower, 3 dollars for celery, 2 dollars for onions, you get my drift. Now how do you feed your family healthfully for the least amount of money possible? Good question. Not every one can live on left overs, not to mention even liking left overs. So the question is- how do you keep things fresh and not boring. How can one trick their family into thinking they are NOT eating left overs? (side note, I can live on left overs)

During the winter, I often resort to frozen veggies because they are much cheaper and still healthy. I do not like canned veggies (unless it’s corn) I find canned veggies to be mushy, gross and sickening- but that’s just my opinion. But I still like to buy fresh carrots, onions, garlic and other veggies when there’s a sale on. I like to peel and chop. Hire me, and I’ll come over and prep your fruits and veggies for you, I could even cook your dinner 😉

I made Ginny’s Cashew rice bowl. I used the veggies I had on hand- read: already washed and chopped. I had brussels sprouts, carrots, green beans and zucchini. I cooked the recipe as it states, (though I didn’t add  rice to the wok), as I had cooked it in the IP (instant pot), as I was cooking the veggies and didn’t want the warm rice to stick and become mushy. By using the IP I was able to cut the cooking time in half. If I had made the rice before hand and it was cold, I would’ve added it to the wok with the cashews. This worked perfectly.

I also made foiled wrap veggies, which turn out well… except the zucchini- it was over cooked, oh well, I will know for next time to keep an eye on it, or not to use them at all. But over all- it was good.

Back to how to make this taste like a new meal? Well, I had left overs today- I added some hot sauce and a little bit of hoisin sauce. Make sure you read labels, you can buy vegan hoisin sauce, it may not be easy to find. I found mine in a locally owned store where the owner carries a lot of vegan product for reasonable prices.

I could’ve taken this dish because I did cook the rice and veggies separately, I could’ve put the veggies in a wrap, and added some broccoli and cheeze to the rice to make a casserole. Even if the veggies and rice were cooked together, it would’ve made for an awesome burrito. I had enough left overs for one, but if I decided to make burrito’s I would’ve been able to get two- stretching my money even further.

Stuffed Shells

I knew I had to make these, it’s been a long time since I’ve had shells and Ginny had me at broccoli. It did take some time to make only because I’m one of those people who do not like store bought sauces. I like making mine “fresh” even if I do cheat and use canned crushed tomatoes. It’s winter here and produce is so damn expensive. I will make more sauce in the summer with fresh tomatoes so I can freeze some for winter. If you are interested in a really good pasta sauce check this one out by Laura Theodore. I don’t add the wine, but I’m sure it would give it a little something extra (not that it needs it).

Now back to  Ginny’s shells. I used tofurky, as I realized my field roast sausage expired. Which still makes me mad, as it’s not cheap. Oh well…. Used daiya cheeze, but I’m sure follow your heart fiesta blend would shine here. I didn’t add mushrooms, because I’m not a big fan. And I didn’t blanch the broccoli as I knew it would cook in the pasta sauce, and I like a little crunch. Other than that I followed the recipe (trust me, use field roast as those sausages add extra flavor, I find tofurky to be on the bland side, my sauce was flavorful, so it made up for the lack of spices missing from the sausage).

Would I make these again? Heck to yes!!!!!! Only like I said before, I will use field roast and follow your heart. I would also make the pasta sauce the night before, to make this an easier dish to put together. But 110% worth the time, and ummm….. the mess I made.

Homemade Chirstmas Gift

 

I wanted to share this with everyone because it’s easy, simple yet smells refreshing. I came along a blog post by Kathy Hester, called DIY body powder. I showed it to my daughter and she asked if we could make it. Of course, that’s an excellent gift idea. I had everything in my cupboard to make it- we just needed some bottles.

We went to the dollar store, found the perfect sized shaker bottles, bought some without really thinking about how many we needed. Came home and she got to work. She decorated the bottles, made her gift bags and cards. Got to work on mixing the ingredients and scooping the wonderful smelling powder into the bottles. (Ignore the tablecloth, there’s certain areas in my life where I can be lazy. Changing tablecloths is one of them)

We ran out of bottles- so I had to go back out the next day. Finished them at school during lunch. Her friends came over and asked what was smelling so good. She told them. Then her friends asked me for the recipe (these girls are in grade three!)

I gave them and everyone else who asked me for the recipe this link Kathy’s body powder so they can make their mom, aunties, grandma’s, friends this magical peppermint concoction.

I had a chat with a few of my friends who asked me- you just happened to have peppermint extract in your cupboard? Yes, plus everything else. I mean who doesn’t have these things in hand?!
