I love potatoes. I like them any way I can get them. Boiled, baked, fried, mashed, with butter, ketchup, salt, pepper you name it….. I’m in heaven.
I came across a post by Laura Theodore on Facebook the other day, of course I needed to share this with everyone I know. The spice mixture just sounded good. And seriously a good spicy potato is a must have on everyone’s dinner, lunch, breakfast, brunch or even snack plates. (I might have had a couple straight from the pan and yep, that hurt my mouth, but it was worth it!!!)

Looks great right????? Use parchment paper for easy clean up. Now wait for it…… wait……. it’s coming (you have two seconds to wait, I waited 40 mins while my whole place smelled awesome and making me hungry)
I ended up putting ketchup on this, but as I was telling Kayla, this would be fantastic with rooster sauce a.k.a sriracha sauce. If you have never heard of it, you must be living under a rock… it’s my Frank’s red hot (I put that chit on everything). Next time I make these home fries I will add the sauce. Also I didn’t have any sweet paprika, so I used smoked paprika. Delish!!! I only wish I had left overs for brunch today.
